  • 250 ml of warm milk
  • 100 g of granulated sugar
  • 100 g of soft butter

  • 7 g of dry brewer's yeast (or 20 g of fresh brewer's yeast)
  • 1 pinch of salt

  • 100 g of cane sugar
  • 2 tablespoons of ground cinnamon
  • 50 g of soft butter

  • Maple syrup to taste
  • Powdered sugar (optional)

How to Make Cinnamon Brioches

Making these brioches is easier than you think. I'll guide you step by step, so you can enjoy these delights without any problems!

1. Prepare the Dough

  1. In a large bowl, pour the warm milk and add the dry yeast. Mix well until the yeast has completely dissolved.
  2. Add it granulated sugar and the egg, continuing to mix.
  3. Gradually add the flour, mixing with a whisk or wooden spoon.
  4. Enter your soft butter into pieces and a pinch of salt. Continue kneading until you get a smooth and homogeneous dough.
  5. Cover the bowl with a tea towel and leave bump up for about 2 hours or until the dough doubles in volume.

2. Prepare the Cinnamon Filling

  1. In a bowl, mix together brown sugar , cinnamon powder.
  2. Enter your soft butter and mix until you get a cream.

3. Shape the Brioches

  1. When the dough is ready, transfer it to a lightly floured surface.
  2. Roll out the dough with a rolling pin until you obtain a rectangle about 1 cm thick.
  3. Spread the cinnamon filling over the entire surface of the dough.
  4. Roll the dough up on itself, starting from the longest side, until it forms a roll.
  5. Cut the roll into slices of approximately 3-4 cm thick and arrange the slices on a baking tray lined with baking paper.

4. Second Leavening and Baking

  1. Cover the brioches with a tea towel and leave rise for another 30 minutes.
  2. Meanwhile, preheat the oven to 180°C.
  3. Bake the brioches for 20 25-minute or until golden brown.

5. The Final Decoration
